Scottish Shortbread
Ingredients:
1 cup light brown sugar
5 cups all-purpose flour
1 pound butter, softened
Directions:
Place butter and brown sugar in mixer bowl and cream until light and fluffy. Add 3 cups flour, 1 cup at a time. Mix well after each addition. Knead in as much remaining flour as possible on floured surface (dough will be very stiff). Divide dough in half. Pat dough out to make it 1/2 inch thick on cookie sheets covered with baking parchment. Prick through with fork into desired serving pieces. Bake at 275 degrees for 1 hour or until light brown. Cool.
